Baking potatoes baked and slightly cooled |

Slices turkey bacon cooked and crumbled |

Jar (2 ounces) pimientos drained |

grated reduced-fat Cheddar cheese |

Slice potatoes in half, lengthwise. Scoop out center of potato to within 1/4-inch of potato skin. Reserve potato for other use. |

In medium-size bowl, combine eggs, bacon, green onion, green pepper and pimiento. Spoon turkey mixture evenly into potato shells and sprinkle 1 tablespoon cheese over each shell. |
